Healthy Eating: Western Omelet Frittata

Western Omelet Frittata

I like making this ahead of time on Sundays, to have quick, easy breakfasts during the week.  In the morning, I place a slice in the microwave for approximately 1 ½ minutes, while fixing my coffee and breakfast is ready.

Prep Time:         15 minutes

Cook Time:         20 - 30 minutes

Servings:             5

Ingredients:

1 T olive oil

5 oz. Canadian bacon cut in cubes

¼ c chopped onion

¼ c chopped green or orange pepper

½ c chopped mushrooms

¼ c sliced black olives drained

4 oz. shredded cheddar cheese

10 large eggs

1 T Pork Spice Rub or seasoning of your choice

1 T heavy cream

Instructions:

·       Preheat oven to 400 degrees

·       Spray a 9 in pie pan, with non-stick spray

·       In a pan heat olive oil, add onions, peppers and mushrooms, cook until tender

·       Place evenly, the cubed Canadian bacon in the pie pan

·       Spread the vegetable mixture on top of Canadian bacon

·       Layer black olives

·       Top with shredded cheese

·       Mix eggs, seasoning and cream until well blended

·       Pour egg mixture into the pie pan

Bake for approximately 20 to 30 minutes, until center is set and knife comes out clean.


This recipe makes it easy to be creative. Consider putting together different flavors, Italian, Mexican or Greek.  As the base recipe, use 2 eggs, 1 oz. of breakfast meat, 1 oz. of cheese and ¼ cup of vegetables per serving.  Be creative!
