Spaghetti Squash Lasagna Casserole

With the cooler weather, nothing is more comforting than lasagna.  This recipe is great way to enjoy lasagna that is low carb.  I assembled this earlier in the day, making it perfect to serve to guest.  Serve with a side salad and a nice glass of Shiraz for an easy, delicious meal.

Spaghetti Squash Lasagna Casserole

 Prep Time:        20 minutes

Cook Time:       1 hour for squash, 30 minutes for casserole

Servings:           6

 

Ingredients:

  • 1  spaghetti squash 2-3 lbs.

  • 1T olive oil

  • 1T Italian seasonings

  • 1lbs. bulk Italian sausage

  • 24 oz. marinara sauce (If using store bought please compare labels)

  • 8 oz. cream cheese, softened

  • ½ c. sour cream

  • 1T chopped parsley

  • 6 oz. shredded mozzarella

 

Instructions:

Squash

·       Preheat oven to 400 degrees.  Spray a rimmed backing sheet with non-stick spray.

·       Prep the squash but cut the squash length-wise, scraping and removing the seeds.

·       Brush the squash with olive oil, and sprinkle with Italian seasonings.

·       Place on baking sheet cut-side down, and bake for approximately 1 hour, until fork tender.

·       Scrape the squash with a fork, width-wise for longer strands.

Meat sauce

·       Brown the bulk Italian sausage in a large skillet.

·       Drain the grease, then add the marinara sauce.  Cook until heat through.

Cream cheese mixture

·       In a small bowl, combine cream cheese and sour cream until well combined.

Assemble

·       Preheat oven to 350 degrees.

·       Spray 9X13 baking dish with non-stick spray.

·       Place half of squash in the dish.

·       Spread half the meat sauce over the squash.

·       Layer all the cream cheese mixture over the sauce.

·       Add the remaining squash and top with the rest of meat sauce.

·       Cover with foil and bake for 15 minutes.

·       Remove foil and spread mozzarella on top.  Bake an additional 15 minutes, until cheese is melted and casserole is bubbly.

Not all store-bought sauces are the same, it is imperative to read and compare labels. The marinara/pasta sauce I used was store bought. It only contained 8g of carbs, 6g of net carbs,1g of fat and no added sugar, per servings
