Sauteed Kale and Apple

This is an easy, fall side dish that serves well with a boneless grilled pork chop or turkey for quick, healthy meal. For a special evening, it pairs well with a glass of Chardonnay or Pinot Noir. 


 

Prep Time:         5 minutes

Cook Time:         10 -12 minutes

Servings:             4

 

Ingredients:

2 T olive oil

1 T minced garlic

1 t ground ginger

1 small apple, chopped in bite size pieces

½ c. chopped onion

1 T apple cider vinegar

4 c. baby kale, cut in bite size

¼ c. walnut pieces

 

Instructions:

·       In a large skillet on medium heat, heat olive oil, garlic and ginger until garlic slightly browns.

·       Add apple and onion, cook until apple is slightly tender.

·       Add apple cider vinegar and cook on low for about 5 minutes.

·       Add the kale and sauteed until slightly wilted.

·       Toss in walnuts, mix well and serve.
