Ricotta, Sausage & Egg Casserole

This dish is so easy and versatile you can make it for any meal. It great way to impress overnight guests or wow at the holiday brunch. Serve this with a garden salad and you have a delicious dinner on the table.

Prep Time:         10 minutes

Cook Time:         25 - 35 minutes

Servings:             6

Ingredients:

1 lb. of Hot Italian bulk Sausage

8 eggs

1 T Italian seasoning

2 oz. cream cheese, softened

1 C of ricotta cheese

2-3 Roma tomatoes - sliced

6 to 8 fresh basil leaves

Instructions:

·       Preheat oven to 400 degrees

·       Spray a 7X11 dish, with non-stick spray

·       Brown the sausage and crumble, then drain and spread in bottom of dish

·       Blend the eggs, seasoning and cream cheese until smooth, pour over the sausage

·       Drop spoonful of ricotta cheese on top of egg mixture

·       Place tomato slices and basil leaves on top

Bake for approximately 25 to 35 minutes, until center is set and knife comes out clean.


I made this for late breakfast for overnight guests during the Holidays and it was a big hit. Enjoy it with a mimosa to get the day off right.
