Healthy Eating: Greek Chicken

Greek Chicken Dish

This recipe is full of flavor, yet easy to prepare.  Perfect to serve to company over cauliflower rice and paired with a glass of Merlot.  I know, you typically should not serve a red wine with chicken but the bold flavors in this recipe pairs well with a Merlot or an oak Chardonnay.

Prep Time:         15 minutes

Cook Time:         20 - 25 minutes

Servings:             4

Ingredients:

4 large boneless chicken thighs or breasts

2 T olive oil

2 tsp. of minced garlic

1 T Greek seasoning (use more to taste)

1 14.5 oz. can of roasted diced tomatoes drained

½ C green olives fill space with the olive juice

½ C feta cheese crumbles

1 T capers

Instructions:

·     Preheat oven to 375 degrees

·       Using an oven safe pan heat olive oil, Greek seasoning and garlic

·       Brown chicken in the pan on both sides

·       Add tomatoes, olives, feta cheese and capers to pan

·       Place the pan in the oven and bake uncovered

Bake for approximately 20 minutes, until the internal temperature is 165 degrees   


The chicken is tender and flavorful. I have also added artichoke hearts to the recipe, which provides more Greek flavor to the dish.
